Why We Chose Not to Have an In-House Caterer

When we created Apollo Fields, we wanted couples to have more freedom.

Your wedding shouldn't have to fit into a predetermined package. It should reflect your story, your traditions, and the way you love to gather people around a table.

By allowing outside caterers, you're able to choose the team that feels like the right fit for your celebration.

A Few Simple Requirements

To keep your day running smoothly, we do ask that outside caterers:

  • Be professionally licensed and insured.

  • Provide a Certificate of Insurance (COI) before your event.

  • Handle all food preparation and service.

  • Remove their equipment and catering-related waste at the end of the evening.

These requirements help protect everyone involved and ensure your wedding day runs as smoothly as possible.

Terrence and I both spent years working in restaurants and behind the bar before photography became our full-time career. We learned that some of the best memories happen around a table—not because everything is perfect, but because people feel comfortable enough to linger.
